It is a wine obtained from a careful selection of the oldest vineyards of Pinot Bianco, Friulano, Malvasia and a small part of Traminer Aromatico and tells the story of a territory crossed by the emerald Sontium, the Latin name of the Isonzo river. The Pinot Blanc fermented in 500 liter Tonneaux, half of which were new and the other second passage, with the aim of avoiding too obvious marking of the wood. The other varieties were fermented in steel.

The versatility of the Ribolla Gialla grape has meant that over time the related sparkling version has also taken hold on the market. High acidity, aromatic fragrance, overall structure, these and other factors have contributed to the success of this particular and typical type of sparkling wine. The secret of sparkling Ribolla Gialla lies in the fact that in addition to the grapes harvested at the right ripening time, every year a certain quantity of the same grapes is made available but left to dry. The result is a sparkling wine with a deep, centered straw yellow color and a thick, intense, continuous foam. On the nose, the yeast notes rather leave room for fragrances of yellow flowers and macerated fruit (apricot and orange peel above all), with hints of alcohol and fruit in alcohol. In the mouth the carbonation of the wine is felt but on tiptoe: when tasting the carbon dioxide fills the palate to support the fruit but disperses in a uniform and homogeneous way, leaving only its fresh, non-aggressive note , and a very respectable palatal cleanliness. The taste memory is full, harmonious and complex, with excellent length and persistence. Remaining in the gastronomic typicalities of the area, we could combine this particular sparkling wine with the many appetizers, even supported ones, ranging from sausages to fresh cheeses, from fried preparations to dishes with mushrooms and fish. Excellent with risottos and seafood pasta, it also goes well with baked and sauced fish preparations. More than with desserts, it is recommended as an aperitif on hot and sunny summer days.
