I grappoli di Glera di Tenuta Civranetta vengono nutriti da strati di “caranto”, antica stratificazione pleistocenica composta da terreno compatto limoso-argilloso con noduli calcarei. Un paleosuolo ricco di mineralità che trasmette ad ogni singolo acino un complesso equilibrio aromatico. La vicinanza del mare e dei suoi venti, conferiscono alle uve una sapidità caratteristica che ne valorizza gli aromi. Il Prosecco DOC Col Fondo è caratterizzato dal deposito di lieviti sul fondo della bottiglia, dovuto al metodo di produzione tradizionale, utilizzato fin dall’antichità, che prevede una seconda fermentazione in bottiglia senza sboccatura. Quello che si ottiene è un vino secco, fruttato, fresco e minerale. Il prolungato contatto con i lieviti conferisce un finale sapido e deciso e un sapore equilibrato, arricchito da lievi sentori di crosta di pane. Schietto e diretto, è consigliabile consumarlo limpido dopo averlo separato dal deposito, anche se a piacere può essere servito ancora leggermente torbido.

The versatility of the Ribolla Gialla grape has meant that over time the related sparkling version has also taken hold on the market. High acidity, aromatic fragrance, overall structure, these and other factors have contributed to the success of this particular and typical type of sparkling wine. The secret of sparkling Ribolla Gialla lies in the fact that in addition to the grapes harvested at the right ripening time, every year a certain quantity of the same grapes is made available but left to dry. Senza niente, eccetto il vino. A questo spumante, interamente prodotto da uve Chardonnay coltivate in biologico, non si aggiungono solfiti. Il tratto puro dell’annata viene perciò reso complesso grazie alla qualità delle uve e ad una permanenza sui lieviti di 40 mesi. In bocca, ad un attacco floreale, fanno seguito tanti agrumi e una spiccata sapidità.

Crémant d'Alsace is a classic method where refermentation in the bottle is done by adding fresh Auxerrois must to the base wine which has completed aging in cement vats after approximately 11 months; neither "liqueur de tirage" (syrup and selected yeasts) nor, although disgorged, "liqueur d'expedition" is added, in fact the wine is an extra brut.

Straw yellow with greenish reflections. The perlage is fine and continuous, with an abundant and persistent crown. On the nose the aroma is broad and embraces nuances of sweet and slightly ripe fruit with subtle hints of vegetables and vanilla. In the mouth it is savory and complete, fresh and vibrant with a return of the notes perceived on the nose. The finish is long, elegant and harmonious.

“Profilo Rosé” di Picchioni nasce da uve attentamente selezionate nei vigneti aziendali. Dopo la vinificazione matura e affina direttamente in bottiglia, sui propri lieviti, per un periodo di ben 8 anni. In fase di sboccatura al vino non vengono aggiunti zuccheri o simili, nello stile di un grande Spumante Metodo Classico Pas Dosé. Al naso prevalgono sensazioni di frutta matura e frutta secca, con spezie e soffusa mineralità.
