La croccantezza liquida. Il segreto della sua bellezza non fiorisce subito al naso, dove si nasconde, ma in bocca dove si sprigiona. La buccia spessa e ricca di tannini conferisce al vino un sapore tutto suo: dalla frutta essiccata a dei tannini morb idi e avvolgenti con un finale minerale lungo e persistente. Dopo un sorso si ha la percezione di masticare il vino. Immergendosi nel bicchiere e chiudendo gli occhi la sensazione aumenta: immaginando di passeggiare tra i filari e di assaggiare chicco per chicco la Ribolla Gialla.

Il suo nome richiama il periodo d’oro francese, il XVII secolo, come tributo al Re Sole, all’apoteosi delle arti, al lusso e alle origini della moderna gastronomia. Viene prodotto dal 1959 e nasce dall’idea di creare una Grande Cuvée unica ed eccezionale a partire da un assemblaggio di 3 diverse annate, contraddicendo l’idea che le Cuvée più prestigiose debbano essere costituite da un solo millesimo. Il suo inventore, Bernard de Nonancourt, ha coniato per questa Cuvée il motto “le meilleur du meilleur avec le meilleur”, perché nata dall’assemblaggio delle migliori uve delle migliori annate (in questo caso 2007, 2006 e 2004) e provenienti dai migliori Grand Cru. Si tratta di uve di Chardonnay e Pinot Nero selezionate in 10 differenti Grand Crus.
