It ferments in steel, where it subsequently matures for a few months. It maintains a beautiful fruit integrity, expressing to the maximum all the best peculiarities of varietal and terroir.

Red Meats
10 days of maceration with the skins, vinified in steel. It comes out a year and a half after the harvest because the tannins and acidity need some time. It is the more docile and drinkable version of Montepulciano desired by Jacopo: shorter maceration, only steel, mature harvest but not beyond. However, it is not a glu glu wine, here too there is substance and flavour.
