I grappoli di Glera di Tenuta Civranetta vengono nutriti da strati di “caranto”, antica stratificazione pleistocenica composta da terreno compatto limoso-argilloso con noduli calcarei. Un paleosuolo ricco di mineralità che trasmette ad ogni singolo acino un complesso equilibrio aromatico. La vicinanza del mare e dei suoi venti, conferiscono alle uve una sapidità caratteristica che ne valorizza gli aromi. Il Prosecco DOC Col Fondo è caratterizzato dal deposito di lieviti sul fondo della bottiglia, dovuto al metodo di produzione tradizionale, utilizzato fin dall’antichità, che prevede una seconda fermentazione in bottiglia senza sboccatura. Quello che si ottiene è un vino secco, fruttato, fresco e minerale. Il prolungato contatto con i lieviti conferisce un finale sapido e deciso e un sapore equilibrato, arricchito da lievi sentori di crosta di pane. Schietto e diretto, è consigliabile consumarlo limpido dopo averlo separato dal deposito, anche se a piacere può essere servito ancora leggermente torbido.
