          Crémant d'Alsace is a classic method where refermentation in the bottle is done by adding fresh Auxerrois must to the base wine which has completed aging in cement vats after approximately 11 months; neither "liqueur de tirage" (syrup and selected yeasts) nor, although disgorged, "liqueur d'expedition" is added, in fact the wine is an extra brut.

Dopo la vinificazione matura e affina direttamente in bottiglia, sui propri lieviti, per un periodo di ben 8 anni. In fase di sboccatura al vino non vengono aggiunti zuccheri o simili, nello stile di un grande Spumante Metodo Classico Pas Dosé. Al naso prevalgono sensazioni di frutta matura e frutta secca, con spezie e soffusa mineralità.
